Chicken Parmesan Meatballs & Pesto Chicken Meatballs

Perfect for a weeknight dinner and I have an option to make the recipes gluten-free (and low carb) if desired! We have been on a meatball kick lately and I don’t think we’ll be stopping any time soon. I love how easy they are to make, and you can make just about any flavor combination.
These meatball recipes are ready in less than 30 minutes! They also only require a handful of ingredients and a few minutes of prep time.

What You’ll Need:
- Chicken Parmesan Meatballs: ground chicken, almond flour or breadcrumbs, egg, grated parmesan, marinara sauce, shredded mozzarella, garlic powder, pepper, salt, crushed red pepper, oregano, fresh basil (optional), spaghetti or zucchini noodles
- Pesto Chicken Meatballs: ground chicken, almond flour or breadcrumbs, grated parmesan, pesto, ground pepper, salt, garlic powder, fresh basil (optional), spaghetti or zucchini noodles
How To Make:
Both of these meatball recipes are very easy to make, require only a few minutes of prep time and are ready in less than 30 minutes. For both recipes, the main steps are mixing together the meatball ingredients, forming into 16 meatballs and either pan searing or baking. To make the Pesto Chicken Meatballs, all you have to do is bake the meatballs then serve with desired toppings and spaghetti or zucchini noodles. For the Chicken Parmesan Meatballs, you’ll pan sear the meatballs, then bake them, then serve with spaghetti or zoodles.
Chicken Parmesan Meatballs
Ingredients
Meatballs:
- 1 lb ground chicken
- 1 egg
- ¼ cup breadcrumbs or almond flour
- ¼ cup parmesan cheese
- 1 tsp oregano
- ½ tsp garlic
- ½ tsp pepper
- ½ tsp salt
- ¼ crushed pepper
Serve With:
- 1 tbsp oil
- 24 oz marinara sauce
- 1 cup shredded mozzarella cheese
- Spaghetti or zucchini noodles
- 1/4 cup fresh basil optional
Instructions
- Preheat oven to 375°F.
- In a large mixing bowl, combine the meatball ingredients. Form into 12-16 meatballs.
- In an oven-safe skillet, heat oil over medium heat. Add the meatballs to the skillet and brown on each side, about 1-2 minutes. Pour in marinara sauce and sprinkle the mozzarella cheese evenly on top of the sauce.
- Bake for 15-18 minutes, or until chicken reaches internal temperature of 160°F. While baking, make the zucchinin noodles or spaghetti according to the package instructions. Serve zoodles or spaghetti topped with meatballs, sauce and fresh basil.
Pesto Chicken Meatballs
Ingredients
Meatballs:
- 1 lb ground chicken
- ¼ cup breadcrumbs or almond flour
- 1/4 cup freshly shredded parmesan cheese
- 3 tbsp pesto
- 1/2 tsp garlic powder
- ¼ tsp pepper
- ¼ tsp salt
Serve With:
- Spaghetti or zucchini noodles
- 3/4 cup pesto
- 1/4 cup fresh basil optional
- 1/4 cup freshly shredded parmesan
Instructions
- Preheat oven to 375°F.
- In a large mixing bowl, combine the meatball ingredients. Form into 16 meatballs.
- Add meatballs to an 8×8 glass baking dish lightly sprayed with nonstick cooking oil spray. Bake for 20-25 minutes, or until chicken reaches internal temperature of 160°F.
- While baking, make the zucchini noodles or spaghetti according to the package instructions. Serve spaghetti or zoodles topped with meatballs, remaining pesto, extra parmesan cheese and fresh basil (optional).
