Pesto Chicken Meatballs

Ingredients
  

Meatballs:

  • 1 lb ground chicken
  • ¼ cup breadcrumbs or almond flour
  • 1/4 cup freshly shredded parmesan cheese
  • 3 tbsp pesto
  • 1/2 tsp garlic powder
  • ¼ tsp pepper
  • ¼ tsp salt

Serve With:

  • Spaghetti or zucchini noodles
  • 3/4 cup pesto
  • 1/4 cup fresh basil optional
  • 1/4 cup freshly shredded parmesan

Instructions
 

  • Preheat oven to 375°F.
  • In a large mixing bowl, combine the meatball ingredients. Form into 16 meatballs.
  • Add meatballs to an 8x8 glass baking dish lightly sprayed with nonstick cooking oil spray. Bake for 20-25 minutes, or until chicken reaches internal temperature of 160°F.
  • While baking, make the zucchini noodles or spaghetti according to the package instructions. Serve spaghetti or zoodles topped with meatballs, remaining pesto, extra parmesan cheese and fresh basil (optional).
