White Chocolate Funfetti Cookies
These white chocolate funfetti cookies are so fun & delicious! You really can’t go wrong with sprinkles and white chocolate if you ask me.
What You’ll Need:
To make these White Chocolate Funfetti Cookies, you’ll just need 7 main ingredients and a few simple steps!
Ingredients:
- gluten free 1 to 1 baking flour (I used this one from Bobs Red Mill)
- butter
- eggs
- vanilla
- baking powder
- sugar
- white chocolate
- sprinkles
* Possible substitutes listed below. NOTE: I have not personally tried any of these substitutes for this recipe, however I believe they could work.
- you could substitute the gluten-free 1-1 baking flour for regular flour or a different 1-1 gluten free flour (like this one from King Arthur)
- you can easily leave out the sprinkles and/or substitute regular chocolate chips for the white chocolate chips
- if you’d like to use brown sugar or coconut sugar, you should be able to substitute 1:1 for the cane sugar (color of the cookies will be darker)
How To Make:
This recipe comes together in just a few simple steps. First, whisk together the gluten-free 1 to 1 baking flour, baking powder and dash of salt. Set aside and in an electric mixer or with a hand mixer, combine butter, eggs, sugar, and vanilla extract. Fold in sprinkles and white chocolate chips. Refrigerate dough for 20-30 minutes. Preheat the oven to 350 degrees. Line a cookie sheet with parchment paper. The dough makes ~18 golf ball size cookies.

Ingredients
- 1 2/3 cups gluten free 1 to 1 baking flour
- 10 tbsp butter softened
- 2 eggs
- 2/3 cup cane sugar
- 2 tsp vanilla extract
- 1/2 tsp baking powder
- 1/4 tsp salt
- 2/3 cup white chocolate chips
- 2-3 tbsp sprinkles
Instructions
- Whisk together flour, baking powder and salt and set aside.
- With an electric mixer or hand mixture, combine the butter and sugar, then add in the eggs and vanilla extract. Finally, fold in sprinkles and white chocolate chips.
- Refrigerate dough for 20-30 minutes. Preheat oven to 350 degrees F and line a baking sheet with parchment paper.
- Use a cookie scoop to create 18 golf ball size cookies (I baked in two batches of 9). Bake for 12-14 minutes.
