Whisk together flour, baking powder and salt and set aside.
With an electric mixer or hand mixture, combine the butter and sugar, then add in the eggs and vanilla extract. Finally, fold in sprinkles and white chocolate chips.
Refrigerate dough for 20-30 minutes. Preheat oven to 350 degrees F and line a baking sheet with parchment paper.
Use a cookie scoop to create 18 golf ball size cookies (I baked in two batches of 9). Bake for 12-14 minutes.
