Thai Chicken Salad with Peanut Dressing

I made this for lunch yesterday and had enough leftover for my husband and I to have for lunch today. Honestly, we loved it so much I wish I made more. If this Thai chicken salad is up your alley, I’d highly recommend doubling the recipe! Either way, you only need a few simple ingredients, 5 for the salad & 5 for peanut dressing. To make this recipe even easier, you could also use a store bought peanut sauce.

To make this Thai Chicken Salad with Peanut Dressing, you’ll need a few simple ingredients, two mixing bowls (one for the salad and one for the dressing) and a fork – that’s it! Really doesn’t get much easier than this.
Ingredients:
- 16 oz bag shredded green & red cabbage with carrots
- 1-2 lbs shredded chicken (you can cook it yourself or a rotisserie chicken works great too!)
- 1 red pepper
- 4 green onions (about 1/3 cup)
- 2 tbsp fresh cilantro (can easily be left out if you don’t like the taste)
- Peanut sauce: peanut butter (or almond butter for paleo), water, soy sauce (or coconut aminos), maple syrup, garlic and ginger to taste, hot sauce (optional)

Thai Chicken Salad with Peanut Dressing
Ingredients
- 1-2 lbs chicken cooked and shredded (or rotisserie chicken)
- 16 oz bag shredded green and red cabbage with carrots
- 1 red pepper diced
- 4 green onions diced (about 1/3 cup)
- 2 tbsp cilantro optional
- peanuts for topping
Peanut Dressing
- 1/2 cup creamy peanut butter
- 1/3 cup water
- 2-3 tbsp soy sauce or coconut aminos
- 1-2 tbsp maple syrup
- 3 cloves garlic minced
- ginger to taste
- 2 tsp hot sauce optional
Instructions
- In a mixing bowl, toss all salad ingredients together.
- In a separate bowl, mix peanut dressing ingredients together until smooth.
- Add dressing to salad if consuming immediately, or store salad and dressing separately for 3-5 days.
