Thai Chicken Salad with Peanut Dressing

Ingredients

chicken
cooked and shredded (or rotisserie chicken)

bag shredded green and red cabbage with carrots

red pepper
diced
4
green onions
diced (about 1/3 cup)

tbsp
cilantro
optional
peanuts
for topping
Peanut Dressing
1/2
cup
creamy peanut butter
1/3
cup
water
2-3
tbsp
soy sauce or coconut aminos
1-2
tbsp
maple syrup
3
cloves
garlic
minced
ginger
to taste
2
tsp
hot sauce
optional
Instructions
In a mixing bowl, toss all salad ingredients together.
In a separate bowl, mix peanut dressing ingredients together until smooth.
Add dressing to salad if consuming immediately, or store salad and dressing separately for 3-5 days.
