Thai Chicken Salad with Peanut Dressing

Ingredients
  

  • 1-2 lbs chicken cooked and shredded (or rotisserie chicken)
  • 16 oz bag shredded green and red cabbage with carrots
  • 1 red pepper diced
  • 4 green onions diced (about 1/3 cup)
  • 2 tbsp cilantro optional
  • peanuts for topping

Peanut Dressing

  • 1/2 cup creamy peanut butter
  • 1/3 cup water
  • 2-3 tbsp soy sauce or coconut aminos
  • 1-2 tbsp maple syrup
  • 3 cloves garlic minced
  • ginger to taste
  • 2 tsp hot sauce optional

Instructions
 

  • In a mixing bowl, toss all salad ingredients together.
  • In a separate bowl, mix peanut dressing ingredients together until smooth.
  • Add dressing to salad if consuming immediately, or store salad and dressing separately for 3-5 days.
