Gluten-Free Pretzel Bites (No Yeast!) with Cheese Dip

The pretzel bites are made with just two main ingredients – Judee’s All purpose gluten-free flour and Greek yogurt, and baked in the oven until golden brown. The cheese dip is the perfect texture, complete with all the cheesy goodness and you can even add beer in it for extra flavor if you’d like! Basically, you will absolutely love these and I can’t wait for you to make them!!

Ingredients:
- Judee’s All Purpose Gluten Free Bread Mix

- Greek yogurt
- baking powder
- baking soda + water
- butter
- sea salt or pretzel salt
- Cheese Dip:
- sharp cheddar cheese
- butter
- milk, of choice
- Judee’s All Purpose Gluten Free Bread Mix
- spicy brown mustard
- worschester sauce
- garlic powder
- onion powder
How To Make:
These are way easier to make than you make think! All you have to do is whisk together the dry ingredients for the dough, then add in the greek yogurt and mix until dough-like. Next, take about 1/4 of the dough, and roll until about 1 1/2 inch thick. Cut into 1-1 1/2 inch pieces. Place in boiling water/baking soda for 10 seconds. Brush with egg wash and then bake for 12-14 minutes. For extra golden brown color, brush with melted butter and broil for 1-4 minutes (watching carefully so they don’t burn). Sprinkle with sea salt or pretzel salt. Make the cheese dip by first melting the butter in a saucepan over medium low heat. Add in the flour until well combined. Next, add in the milk, cheese, mustard, worschester sauce, garlic powder and onion powder. Mix until cheese is fully melted.
Gluten-Free Pretzel Bites (No Yeast!) with Cheese Dip
Ingredients
- 2 cup all purpose flour
- 1 tbsp baking powder
- 1 tsp salt
- 1 1/2 cups greek yogurt
- Egg wash – 1 egg whisked together with 1 tbsp water
- 1 tbsp butter optional
Baking soda/water “bath”
- 3 cups water
- 2 tbsp baking soda
Cheese Sauce
- 2 cups sharp cheddar cheese shredded
- 3 tbsp butter
- 1 cup milk of choice
- ½ cup beer or 1/3 – ½ cup additional milk
- 1 ½ tbsp Judee’s All Purpose Gluten Free Bread Mix
- 2 tbsp Judee’s Gouda Chees Powder optional
- 1 tbsp spicy brown mustard
- 1 tsp worcestershire sauce
- ½ tsp garlic powder
- ½ tsp onion powder
Instructions
- Preheat oven to 425 degrees F
- Whisk together flour, baking powder and salt. Add in greek yogurt and combine until dough-like
- Sprinkle flour on a cutting board, take about 1/4 of the dough, and roll into a long rope about 1 1/2″ thick. Cut into 1-1 1/2 inch pieces. Repeat with the remainder of the dough. Should make ~48 pretzel bites!
- Bring water and baking soda to a boil, drop in 8-10 pieces at a time for 10 seconds, then scoop out with a slotted spoon.
- Spread out evenly on non-stick baking sheet. Brush with egg wash and sprinkle with sea salt or pretzel salt. Bake for 12-15 minutes.
- While baking, make the cheese sauce. In a sauce pan, melt butter in a saucepan over medium low heat. Add in the flour until well combined. Next, add in the milk, cheese, mustard, worschester sauce, garlic powder and onion powder. Mix until cheese is fully melted.
- Optional: brush the pretzel bites with melted butter and broil for 1-4 minutes, watching closely so they don’t burn. Top with more sea salt or pretzel salt
