California Breakfast Burrito
This California Breakfast Burrito is a dream come true (if you ask me). It’s basically all the best breakfast foods wrapped in a delicious easy-to-eat tortilla.
One of the main things I miss about living in California is the food. If you have ever had a “California Burrito” (made with french fries, carne asada and cheese) or basically any breakfast burrito from CA you know they are the BEST!
These can easily be customized based on your taste or dietary preferences. You can make these using a gluten-free or paleo friendly tortilla. In addition, you can leave out the bacon and/or cheese or use dairy-free cheddar! I even made a fully vegan version using tofu (recipe below).
What You’ll Need:
To make this California Breakfast Burrito, you’ll just need 7 ingredients and a few simple steps!
Ingredients:
- eggs
- avocado
- bacon
- gold potatoes
- cheddar cheese
- burrito size tortillas
Vegan Burrito Ingredients:
- tofu (with 1/2 tsp: turmeric, salt, pepper)
- avocado
- salsa verde
- gold potatoes
- vegan cheddar cheese (optional)
- burrito size tortillas
How To Make:
This recipe comes together in just a few simple steps. First, you’ll bake the fries and bacon (or just the fries for vegan burrito version) for 25-30 minutes. When those are almost done, you’ll make the scrambled eggs or tofu scramble. Then, all you will have to do is mash the avocado and assemble the burritos! You can layer the burrito any way you want! I layered mine like this: avocado mash, bacon, egg or tofu egg, cheese, and finally the potatoes and a little bit of salsa verde.
California Breakfast Burrito
Ingredients
- 1 large gold potato cut into fries
- 6 eggs scrambled
- 1 avocado mashed
- 4 slices bacon
- 3/4 cup shredded cheese
- ½ cup salsa verde
- 4 burrito size tortillas
Instructions
- Preheat the oven to 400 degrees F. Line a baking sheet with foil and then place a cooling rack on top (you don’t have to use the cooling rack – but it helps the fries and bacon get extra crispy).
- Spread fries and bacon even across rack and bake for 25-30 minutes.
- Assemble the burrito! I did mine in this order: avocado, bacon, egg, cheese, potatoes, salsa verde. Fold into a burrito & enjoy!
Vegan Burrito
Ingredients
- 1 large gold potato cut into fries
- 1 block tofu mixed with 1/2 tsp turmeric & salt/pepper to taste
- 1 avocado mashed
- 3/4 cup shredded vegan cheese
- ½ cup salsa verde
- 4 burrito size tortillas
Instructions
- Preheat the oven to 400 degrees F. Line a baking sheet with foil and then place a cooling rack on top (you don’t have to use the cooling rack – but it helps the fries get extra crispy).
- Spread fries even across rack and bake for 25-30 minutes.
- Once the fries are almost done, add the tofu to a small bowl and mash with a fork. When only small pieces remain, mix in spices. On a pan over medium heat, sauté tofu with 1 tbsp oil for 4-5 minutes.
- Assemble the burrito! I did mine in this order: avocado, tofu “egg”, vegan cheese, potatoes, salsa verde. Fold into a burrito & enjoy!
