Vegan Burrito

Ingredients
  

  • 1 large gold potato cut into fries
  • 1 block tofu mixed with 1/2 tsp turmeric & salt/pepper to taste
  • 1 avocado mashed
  • 3/4 cup shredded vegan cheese
  • ½ cup salsa verde
  • 4 burrito size tortillas

Instructions
 

  • Preheat the oven to 400 degrees F. Line a baking sheet with foil and then place a cooling rack on top (you don't have to use the cooling rack - but it helps the fries get extra crispy).
  • Spread fries even across rack and bake for 25-30 minutes.
  • Once the fries are almost done, add the tofu to a small bowl and mash with a fork. When only small pieces remain, mix in spices. On a pan over medium heat, sauté tofu with 1 tbsp oil for 4-5 minutes.
  • Assemble the burrito! I did mine in this order: avocado, tofu "egg", vegan cheese, potatoes, salsa verde. Fold into a burrito & enjoy!
