Blender Banana Nut Muffins
These blender banana nut muffins could not be any more easy or delicious! They taste absolutely amazing and you most likely have the ingredients on hand already. Basically, run don’t walk to the kitchen and make these!
These muffins are made with real food ingredients like rolled oats, bananas, and walnuts. They are vegan, gluten-free and refined sugar free. You can also remove the walnuts to make them allergy-friendly (meaning it is gluten-free, egg-free, dairy-free, and nut-free)!
I love the flavor combination of bananas and crunchy walnuts (and adding melty chocolate chips is a great idea too!) These blender banana nut muffins are a perfect healthy muffin that the whole family will love. They are only sweetened with bananas, so they are great healthy muffins for kids too!
What you’ll need:
To make these Blender Banana Nut Muffins, you’ll just need a few simple ingredients, and a blender – that’s it! Super easy, right!?
Ingredients:
- rolled oats
- ripe bananas
- milk (of choice)
- coconut oil
- chopped walnuts
- baking powder
- cinnamon, nutmeg
How to Make:
- This recipe is so simple! All you’ll need to do is blend all the ingredients together & then mix in the walnuts. Scoop dough into muffins pans (I recommend silicone muffin liners like these $8 ones on Amazon), then sprinkle with more walnuts & pop in the oven.
Blender Banana Nut Muffins
Ingredients
- 1 1/2 cups rolled oats
- 3 small/medium bananas or 2 large, ripe
- 3/4 cup milk of choice
- 1/4 cup coconut oil melted
- 2 tsp vanilla extract
- 1 tsp baking powder
- 3/4 tsp cinnamon
- 1/4 tsp nutmeg
- 1/4 tsp salt
- 2/3 cup walnuts chopped + more to sprinkle on top
Instructions
- Preheat oven to 400 degrees F & line a muffin pan with muffin liners
- In a blender, add all ingredients besides walnuts. Blend until smooth.
- Mix in walnuts. Fill 12 muffin slots almost to the top and sprinkle with additional chopped walnuts.
- Bake for 18-20 minutes, or until toothpick comes out smooth.
