Blender Banana Nut Muffins

Ingredients
  

  • 1 1/2 cups rolled oats
  • 3 small/medium bananas or 2 large, ripe
  • 3/4 cup milk of choice
  • 1/4 cup coconut oil melted
  • 2 tsp vanilla extract
  • 1 tsp baking powder
  • 3/4 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp salt
  • 2/3 cup walnuts chopped + more to sprinkle on top

Instructions
 

  • Preheat oven to 400 degrees F & line a muffin pan with muffin liners
  • In a blender, add all ingredients besides walnuts. Blend until smooth.
  • Mix in walnuts. Fill 12 muffin slots almost to the top and sprinkle with additional chopped walnuts.
  • Bake for 18-20 minutes, or until toothpick comes out smooth.
