Pumpkin Cookie Dough Truffles
Ingredients
- 2/3 cup pumpkin puree
- 1/3 cup + 1 tbsp coconut flour
- 1/4 cup natural SunButter
- 3 tbsp maple syrup
- 2 tbsp coconut sugar
- 3 tbsp coconut oil melted
- 1 tsp vanilla extract
- 3/4 tsp pumpkin pie spice
- 1/3 cup mini chocolate chips + ~1/3 cup more for dipping
Instructions
- Mix together pumpkin puree, Sunbutter, maple syrup, coconut sugar, coconut oil, and vanilla extract until smooth
- Add in the coconut flour and pumpkin pie spice and mix until no flour is visible. Then add in the chocolate chips.
- Refrigerate for 20-30 minutes to let the coconut flour soak in the liquid
- Roll dough into 18-20 balls and dip each one in melted chocolate. Sprinkle some pumpkin pie spice on top (if desired)
- Freeze until the chocolate hardens & enjoy 🙂
Notes
* I recommend keeping any leftovers in an airtight container in the freezer
