Pumpkin Cookie Dough Truffles

Ingredients
  

  • 2/3 cup pumpkin puree
  • 1/3 cup + 1 tbsp coconut flour
  • 1/4 cup natural SunButter
  • 3 tbsp maple syrup
  • 2 tbsp coconut sugar
  • 3 tbsp coconut oil melted
  • 1 tsp vanilla extract
  • 3/4 tsp pumpkin pie spice
  • 1/3 cup mini chocolate chips + ~1/3 cup more for dipping

Instructions
 

  • Mix together pumpkin puree, Sunbutter, maple syrup, coconut sugar, coconut oil, and vanilla extract until smooth
  • Add in the coconut flour and pumpkin pie spice and mix until no flour is visible. Then add in the chocolate chips.
  • Refrigerate for 20-30 minutes to let the coconut flour soak in the liquid
  • Roll dough into 18-20 balls and dip each one in melted chocolate. Sprinkle some pumpkin pie spice on top (if desired)
  • Freeze until the chocolate hardens & enjoy :)

Notes

* I recommend keeping any leftovers in an airtight container in the freezer
