No Bake Red Velvet Truffles
Ingredients
- 1 cup almond flour
- 1/4 cup coconut cream
- 1/4 cup coconut oil
- 3-4 tbsp maple syrup
- 1 1/2 tbsp beet root powder
- 2 tbsp cacao powder
- 1 tsp vanilla extract
- Dash of salt
Chocolate Coating:
- 1 cup white chocolate chips could sub for coconut butter+maple syrup
- 4-5 tsp coconut oil
- + 🇺🇸 sprinkles
Instructions
- Combine dry ingredients (flour, beet root, cacao, salt) & in a separate bowl, wet ingredients (coconut cream, coconut oil, maple syrup, vanilla extract). Then add the dry ingredients into the wet and mix until smooth
- Refrigerate batter for ~30 minutes, then roll into 12-16 balls
- Melt chocolate and coconut oil over low heat, stirring frequently
- Using a fork, dip each ball into the chocolate and then place on a baking sheet or plate lined with parchment paper. Top with sprinkles
- Freeze for 15-20 minutes, or until chocolate hardens. Enjoy 🙂
