No Bake Red Velvet Truffles

Ingredients
  

  • 1 cup almond flour⁣
  • 1/4 cup coconut cream ⁣
  • 1/4 cup coconut oil ⁣
  • 3-4 tbsp maple syrup⁣
  • 1 1/2 tbsp beet root powder⁣
  • 2 tbsp cacao powder ⁣
  • 1 tsp vanilla extract⁣
  • Dash of salt⁣

Chocolate Coating:

  • 1 cup white chocolate chips could sub for coconut butter+maple syrup ⁣
  • 4-5 tsp coconut oil⁣
  • + 🇺🇸 sprinkles ⁣

Instructions
 

  • Combine dry ingredients (flour, beet root, cacao, salt) & in a separate bowl, wet ingredients (coconut cream, coconut oil, maple syrup, vanilla extract). Then add the dry ingredients into the wet and mix until smooth⁣
  • Refrigerate batter for ~30 minutes, then roll into 12-16 balls ⁣
  • Melt chocolate and coconut oil over low heat, stirring frequently ⁣
  • Using a fork, dip each ball into the chocolate and then place on a baking sheet or plate lined with parchment paper. Top with sprinkles ⁣
  • Freeze for 15-20 minutes, or until chocolate hardens. Enjoy :)
