Combine dry ingredients (flour, beet root, cacao, salt) & in a separate bowl, wet ingredients (coconut cream, coconut oil, maple syrup, vanilla extract). Then add the dry ingredients into the wet and mix until smooth
Refrigerate batter for ~30 minutes, then roll into 12-16 balls
Melt chocolate and coconut oil over low heat, stirring frequently
Using a fork, dip each ball into the chocolate and then place on a baking sheet or plate lined with parchment paper. Top with sprinkles
Freeze for 15-20 minutes, or until chocolate hardens. Enjoy :)
