Snickerdoodle Balls
Ingredients
- 1 1/4 cup oat flour if you don’t have this, you can blend gluten-free oats until fine, flour-like
- 2 tbsp coconut oil or ghee melted
- 1 1/2 tbsp coconut milk
- 1/4 cup honey melted
- 1 tsp vanilla extract
- 1/4 tsp salt
- 1/2 tsp cinnamon
- Optional: 2 scoops collagen protein
Cinnamon Sugar Coating:
- 1 tbsp coconut sugar or brown sugar
- 1/2 tsp cinnamon
Instructions
- In a medium bowl, combine flour with cinnamon, salt and collagen protein (if using)
- In a separate bowl, combine melted coconut oil and honey, coconut milk, and vanilla extract
- Mix the wet ingredients into the dry
- Refrigerate for 20-30 minutes, or until dough has hardened slightly
- Roll into 12-16 balls, then coat in cinnamon sugar mixture

Any leftovers can be kept in an airtight container in the fridge.
