Snickerdoodle Balls

Ingredients
  

  • 1 1/4 cup oat flour if you don't have this, you can blend gluten-free oats until fine, flour-like
  • 2 tbsp coconut oil or ghee melted
  • 1 1/2 tbsp coconut milk
  • 1/4 cup honey melted
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • 1/2 tsp cinnamon
  • Optional: 2 scoops collagen protein

Cinnamon Sugar Coating:

  • 1 tbsp coconut sugar or brown sugar
  • 1/2 tsp cinnamon

Instructions
 

  • In a medium bowl, combine flour with cinnamon, salt and collagen protein (if using)
  • In a separate bowl, combine melted coconut oil and honey, coconut milk, and vanilla extract
  • Mix the wet ingredients into the dry
  • Refrigerate for 20-30 minutes, or until dough has hardened slightly
  • Roll into 12-16 balls, then coat in cinnamon sugar mixture

Notes

Any leftovers can be kept in an airtight container in the fridge.
