Ingredients

cup
oat flour
if you don't have this, you can blend gluten-free oats until fine, flour-like

coconut oil or ghee
melted
1 1/2
tbsp
coconut milk
1/4
cup
honey
melted
1
tsp
vanilla extract
1/4
tsp
salt
1/2
tsp
cinnamon
Optional: 2 scoops collagen protein
Cinnamon Sugar Coating:

tbsp
coconut sugar
or brown sugar

tsp
cinnamon
Instructions
In a medium bowl, combine flour with cinnamon, salt and collagen protein (if using)
In a separate bowl, combine melted coconut oil and honey, coconut milk, and vanilla extract
Mix the wet ingredients into the dry
Refrigerate for 20-30 minutes, or until dough has hardened slightly
Roll into 12-16 balls, then coat in cinnamon sugar mixture
Notes
Any leftovers can be kept in an airtight container in the fridge.
