Peppermint Truffles
Ingredients
- 1/2 cup coconut cream
- 1/2 cup peanut butter or preferred nut butter
- 1/3 cup cacao powder
- 1/3 cup coconut sugar
- 1/4 cup chocolate chips melted
- 3/4 tsp peppermint extract
- + melted chocolate of choice for dipping/drizzling
Instructions
- Combine peanut butter and coconut cream until smooth, then mix in cacao and coconut sugar, and finally the melted chocolate and peppermint
- Refrigerate for 30-45 minutes, or until dough can be easily formed into balls
- Roll into 16 balls, drizzle chocolate of choice on top & freeze for 10-15 minutes, or until chocolate hardens. Keep in an airtight container in the fridge 👌🏼
