Peppermint Truffles

Ingredients
  

  • 1/2 cup coconut cream ⁣
  • 1/2 cup peanut butter or preferred nut butter⁣
  • 1/3 cup cacao powder⁣
  • 1/3 cup coconut sugar⁣
  • 1/4 cup chocolate chips melted⁣
  • 3/4 tsp peppermint extract⁣
  • + melted chocolate of choice for dipping/drizzling⁣

Instructions
 

  • Combine peanut butter and coconut cream until smooth, then mix in cacao and coconut sugar, and finally the melted chocolate and peppermint
  • Refrigerate for 30-45 minutes, or until dough can be easily formed into balls⁣
  • Roll into 16 balls, drizzle chocolate of choice on top & freeze for 10-15 minutes, or until chocolate hardens. Keep in an airtight container in the fridge 👌🏼
