Peanut Butter Ice Cream Cups
Ingredients
Crust
- 3/4 cup oat flour
- 1/4 cup cacao powder
- 1/3 cup peanut butter
- 1/4 cup maple syrup
Filling
- 1 1/4 cup full fat coconut milk
- 1/3 cup peanut butter
- 1/3 cup maple syrup
Chocolate drizzle (melt together)
- 3 tbsp chocolate chips
- 2 tsp coconut oil
Instructions
- Line 12 muffin slots (silicon cups work best)
- In a medium bowl, mix together all ingredients for the crust. Place 1 tbsp mixture in each cup and press down
- Blend together all ingredients for the filling. Pour 2 heaping tbsp in each cup
- Freeze for 2-3+ hours, or until the filling hardens.
- Drizzle with melted chocolate mixture, freeze for additional 5-10 min & enjoy

* I like them best when they thaw for a few minutes
