Peanut Butter Ice Cream Cups

Ingredients
  

Crust

  • 3/4 cup oat flour⁣⁣⁣
  • 1/4 cup cacao powder⁣⁣⁣
  • 1/3 cup peanut butter⁣⁣⁣
  • 1/4 cup maple syrup⁣⁣⁣

Filling

  • 1 1/4 cup full fat coconut milk
  • 1/3 cup peanut butter ⁣⁣⁣
  • 1/3 cup maple syrup⁣⁣⁣

Chocolate drizzle (melt together)

  • 3 tbsp chocolate chips⁣⁣⁣
  • 2 tsp coconut oil ⁣⁣⁣

Instructions
 

  • Line 12 muffin slots (silicon cups work best)⁣⁣⁣
  • In a medium bowl, mix together all ingredients for the crust. Place 1 tbsp mixture in each cup and press down⁣⁣⁣
  • Blend together all ingredients for the filling. Pour 2 heaping tbsp in each cup ⁣⁣⁣
  • Freeze for 2-3+ hours, or until the filling hardens. ⁣⁣⁣
  • Drizzle with melted chocolate mixture, freeze for additional 5-10 min & enjoy⁣⁣⁣

Notes

* I like them best when they thaw for a few minutes ⁣⁣
