Healthier Baked Potato Soup
Ingredients
- 4 gold potatoes skinned and diced
- 3 cups chicken or veggie broth
- 2 cups cauliflower rice
- 1 cup coconut cream
- 1 yellow onion diced
- 3 tbsp flour
- 1 tbsp butter
- 3 cloves garlic
- Toppings: cheese bacon, green onions
Instructions
- Sauté onions until translucent. Add cauliflower rice and cook for another 2-3 minutes.
- Blend onion and cauliflower with coconut cream, then add back to the pan with garlic, butter and flour. Cook on low heat for 3-4 minutes, stirring frequently
- Add potatoes, broth and cream mixture to the crockpot
- Cook on high for 4-5 hours or low for 6-7 hrs
