Healthier Baked Potato Soup

Course Soup

Ingredients
  

  • 4 gold potatoes skinned and diced ⁣⁣
  • 3 cups chicken or veggie broth⁣⁣
  • 2 cups cauliflower rice⁣⁣
  • 1 cup coconut cream⁣⁣
  • 1 yellow onion diced⁣⁣
  • 3 tbsp flour⁣⁣
  • 1 tbsp butter⁣⁣
  • 3 cloves garlic⁣⁣
  • Toppings: cheese bacon, green onions⁣⁣

Instructions
 

  • Sauté onions until translucent. Add cauliflower rice and cook for another 2-3 minutes.⁣⁣
  • Blend onion and cauliflower with coconut cream, then add back to the pan with garlic, butter and flour. Cook on low heat for 3-4 minutes, stirring frequently ⁣⁣
  • Add potatoes, broth and cream mixture to the crockpot⁣⁣
  • Cook on high for 4-5 hours or low for 6-7 hrs
