White Chocolate Cranberry Cookies
Ingredients
- 2 cups oat flour
- 2 eggs room temperature
- 6 tbsp coconut oil or butter, melted
- 3/4 cup coconut sugar
- 2 tsp vanilla extract
- 1 tsp cinnamon
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 cup Craisins dried cranberries
- 3/4 cup white chocolate chips
Instructions
- Preheat oven to 350 degrees & line a baking sheet with parchment paper
- Whisk together eggs, sugar, coconut oil and vanilla extract
- In a separate bowl, combine flour, baking soda, salt, and cinnamon
- Slowly add the dry ingredients to wet. Once combine, fold in Craisins dried cranberries and white chocolate chips.
- Let dough sit in the fridge for 15-20 minutes
- Using an ice cream scoop, place 15 cookie dough balls on the baking sheet.
- Bake for 14-16 minutes, or until edges start to brown.
- Let cool & enjoy 🙂
