Preheat oven to 350 degrees & line a baking sheet with parchment paper
Whisk together eggs, sugar, coconut oil and vanilla extract
In a separate bowl, combine flour, baking soda, salt, and cinnamon
Slowly add the dry ingredients to wet. Once combine, fold in Craisins dried cranberries and white chocolate chips.
Let dough sit in the fridge for 15-20 minutes
Using an ice cream scoop, place 15 cookie dough balls on the baking sheet.
Bake for 14-16 minutes, or until edges start to brown.
