White Chocolate Cranberry Cookies

Ingredients
  

  • 2 cups oat flour
  • 2 eggs room temperature
  • 6 tbsp coconut oil or butter, melted
  • 3/4 cup coconut sugar
  • 2 tsp vanilla extract
  • 1 tsp cinnamon
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 cup Craisins dried cranberries
  • 3/4 cup white chocolate chips

Instructions
 

  • Preheat oven to 350 degrees & line a baking sheet with parchment paper
  • Whisk together eggs, sugar, coconut oil and vanilla extract
  • In a separate bowl, combine flour, baking soda, salt, and cinnamon
  • Slowly add the dry ingredients to wet. Once combine, fold in Craisins dried cranberries and white chocolate chips.
  • Let dough sit in the fridge for 15-20 minutes
  • Using an ice cream scoop, place 15 cookie dough balls on the baking sheet.
  • Bake for 14-16 minutes, or until edges start to brown.
