There are so many different ways you can meal prep & I’m definitely a proponent of doing what works best for you. My goal is to show you how easy it can be and to give you inspiration for various different meals and flavors!
This week I made Crockpot Chicken Pot Pie Soup, Couscous Greek Salad, Sweet Potato Shepherd’s Pie & Mocha Overnight Oats. All of this took me less than an hour and a half to make and will last us most of the week. Below is the order in which I made everything, a list of the main ingredients, and estimated cook time.
Crockpot Chicken Pot Pie Soup (10 min prep, 3+ hours crockpot)
- Ingredients: chicken, gold potatoes, carrots, onion, celery, chicken broth, coconut milk, peas, garlic, spices
- Paleo, whole30 (without peas), gluten-free, dairy-free; can use regular milk instead of coconut milk if desired
Sweet Potato Shepherds Pie (15 min prep, 30 min bake)
- Ingredients: sweet potato, ground turkey, onion, spinach, zucchini, peas, corn, spices
- Gluten-free, dairy-free, Paleo (without the corn), can be made Whole30
Couscous Greek Salad (10 min prep, 10 min cook + 40 min bake if want chickpeas crispy)
- Ingredients: couscous, chickpeas, cucumber, cherry tomatoes, red onion, kalamata olives, parsley, feta (optional), arugula (optional); lemon vinaigrette (olive oil, lemon, mustard, garlic)
- Vegetarian, can be made vegan/dairy-free
Mocha Overnight Oats (5 min prep)
- Ingredients: rolled oats, non-dairy milk, cold brew (or coffee), nut butter, cacao powder, flaxseed meal, vanilla extract, honey
- Gluten-free, dairy-free, refined sugar free

Crockpot Chicken Pot Pie Soup
Ingredients
- 1 lb chicken breast
- 1 small white onion
- 1 cup frozen peas
- 3-4 large carrots diced
- 2-3 sticks celery chopped
- 2 gold potatoes peeled and diced
- 3 cloves garlic minced
- 4 cups chicken broth
- ¾ cup coconut milk
- 2 tbsp fresh parsley chopped
- salt and pepper to taste
Instructions
- Place all ingredients besides coconut milk into a crockpot.
- Cook on high for 3-4 hours or low for 5-6 hours.
- Remove chicken, dice or shred, and add back into crockpot with coconut milk. Stir, turn off heat or switch to warm & serve!
Sweet Potato Shepherds Pie
Ingredients
- 3 medium sweet potatoes peeled and diced
- 1 lb ground turkey
- 1 large zucchini diced
- 1 ½ cups carrots diced
- 1 cup frozen peas
- 2/3 cup frozen corn
- 1 small onion diced
- 2 cups spinach chopped
- 3 cloves garlic minced
- salt and pepper to taste
Instructions
- Steam potatoes for 15-20 minutes or microwave, until soft
- Preheat oven to 350 degrees F.
- Heat oil in a large sauté pan over medium-high heat. Cook onion until translucent, 2-3 minutes. Add in ground turkey, garlic and spices and cook for an additional 5 minutes.
- Add in zucchini, corn, peas, and carrots. Reduce heat to medium-low and cook covered for 5 minutes, or until vegetables soften. Add in spinach, stir, and remove from heat.
- While vegetables are cooking, mash potatoes and combine with butter (optional) and salt/pepper
- In a 9×13 casserole dish (or similar size), add the ground turkey mixture and spread evenly across bottom. Then spread potato layer on top.
- Bake for 25-30 minutes.
Couscous Greek Salad
Ingredients
- 1 1/3 cups dry couscous
- 1 can chickpeas drained and rinsed
- 1 cup cucumbers diced
- 1 cup cherry tomatoes diced
- ¾ cup kalamata olives halved
- ½ cup red onion
- ½ cup feta
- ¼ cup fresh parsley chopped
- 1 tsp oregano
- 3-4 cups arugula optional, for serving
Lemon vinaigrette (mix all ingredients together)
- 1/3 cup olive oil
- Juice of 2 lemons
- 2 cloves garlic minced
- 1 tsp yellow mustard
- salt and pepper to taste
Instructions
- Cook couscous according to package
- Crispy chickpeas (optional): dry and remove as much of the chickpea skins as possible. Toss with 1 tbsp oil of choice, ½ tsp onion powder, ½ tsp garlic powder, ¼ tsp turmeric, ¼ tsp salt. Bake at 400 degrees F for 35-45 minutes.
- Toss cooked couscous, chickpeas, and all other ingredients together.
Notes
Mocha Overnight Oats
Ingredients
- 2 cups rolled oats
- 3 cups milk of choice
- 1 cup cold brew or coffee
- ½ cup cacao powder
- ¼ cup nut butter of choice
- 3 tbsp flaxseed meal
- 2 tsp vanilla extract
- 2 tbsp honey or sweetener of choice
Instructions
- Mix all ingredients together in a bowl.
- Refrigerate in a covered container overnight.
