Ginger Molasses Cookies
Ingredients
- 2 1/2 oat flour
- 1/4 cup molasses
- 2/3 cup brown sugar
- 10 tbsp butter softened
- 1 egg
- 1 1/2 tsp baking soda
- 1 1/4 tsp cinnamon
- 1 1/4 tsp ginger
Instructions
- 1 Combine butter and brown sugar until light and fluffy (by hand or with a mixer), then mix in the rest of the wet ingredients
- 2 Whisk dry ingredients together. Slowly add dry ingredients to wet & mix until well combined
- 3 Refrigerate for 30 minutes
- 4 Preheat oven to 350 degrees & line a baking sheet with parchment paper
- 5 Make dough into 15 balls, press down slightly & sprinkle extra brown sugar on top (optional).
- Bake for 9-11 minutes
