Ginger Molasses Cookies

Ingredients
  

  • 2 1/2 oat flour
  • 1/4 cup molasses
  • 2/3 cup brown sugar
  • 10 tbsp butter softened
  • 1 egg
  • 1 1/2 tsp baking soda
  • 1 1/4 tsp cinnamon
  • 1 1/4 tsp ginger

Instructions
 

  • 1 Combine butter and brown sugar until light and fluffy (by hand or with a mixer), then mix in the rest of the wet ingredients
  • 2 Whisk dry ingredients together. Slowly add dry ingredients to wet & mix until well combined
  • 3 Refrigerate for 30 minutes
  • 4 Preheat oven to 350 degrees & line a baking sheet with parchment paper
  • 5 Make dough into 15 balls, press down slightly & sprinkle extra brown sugar on top (optional).
  • Bake for 9-11 minutes
