1 Combine butter and brown sugar until light and fluffy (by hand or with a mixer), then mix in the rest of the wet ingredients
2 Whisk dry ingredients together. Slowly add dry ingredients to wet & mix until well combined
3 Refrigerate for 30 minutes
4 Preheat oven to 350 degrees & line a baking sheet with parchment paper
5 Make dough into 15 balls, press down slightly & sprinkle extra brown sugar on top (optional).
Bake for 9-11 minutes
