Coconut Chicken Fingers
Ingredients
- 1 lb chicken tenders
- 1/2 cup unsweetened coconut flakes thinner the better
- 1/4 cup breadcrumbs or almond flour
- 2 eggs
- Salt/pepper/garlic to taste
Instructions
- Preheat oven at 400 degrees F
- In a bowl, whisk together eggs and spices
- In another bowl, combine coconut flakes and breadcrumbs
- Dip each chicken tender in the egg mixture, then in the coconut mixture.
- Place covered chicken tenders on a lined baking sheet & bake for 15-18 minutes (or until chicken reaches an internal temperature of 165 degrees F)
