Coconut Chicken Fingers

Ingredients
  

  • 1 lb chicken tenders
  • 1/2 cup unsweetened coconut flakes thinner the better
  • 1/4 cup breadcrumbs or almond flour
  • 2 eggs
  • Salt/pepper/garlic to taste

Instructions
 

  • Preheat oven at 400 degrees F
  • In a bowl, whisk together eggs and spices
  • In another bowl, combine coconut flakes and breadcrumbs
  • Dip each chicken tender in the egg mixture, then in the coconut mixture.
  • Place covered chicken tenders on a lined baking sheet & bake for 15-18 minutes (or until chicken reaches an internal temperature of 165 degrees F)
