Healthier Snickers Bars
Ingredients
Bottom Layer:
- 1 cup oat flour
- 1/2 cup natural peanut butter
- 2 tbsp maple syrup
"Caramel" Filling
- 1/2 cup natural peanut butter
- 1/2 cup full-fat coconut milk
- 1/4 cup maple syrup
- 1 tsp vanilla
- 1/2 cup peanuts
Chocolate:
- 1/4 cup cacao powder
- 1/4 cup coconut oil melted
- 1 tbsp maple syrup
- Optional: 1 tsp sea salt
OR you can use 1/2 cup melted chocolate chips for the chocolate layer
Instructions
- Line a bread pan with parchment paper.
- Mix or blend the crust ingredients together, until dough-like. Then, evenly spread across the bottom of bread pan.
- In a small saucepan – bring the peanut butter, coconut milk, maple syrup, and vanilla extract to a very mild boil. Turn to low, cover and simmer for ~15 minutes (or until mixture is golden brown and starts to thicken), stirring every few minutes. Pour mixture evenly over the crust
- Sprinkle peanuts over the filling and press down with a spatula (can add more than 1/2 cup peanuts, if desired)
- Mix together cacao, melted coconut oil and maple syrup OR melt chocolate chips. Pour over top of the filling.
- Refrigerate for 1-2 hours, or until chocolate hardens and filling becomes caramel-like.
- Cut into ~7 large bars (pictured) or 14 smaller bars (cut the 7 in half) & enjoy 🙂

Keep any leftovers in a container in the fridge 🙂
