Apple Cinnamon Crumble Muffins
Ingredients
- 2 1/2 cups oat flour
- 3 eggs
- 1/2 cup milk of choice
- 1/3 cup coconut sugar
- 5 tbsp butter melted
- 2 tsp vanilla extract
- 1.5 tsp baking soda
- 1 tsp cinnamon
- 2 red apples skinned and diced finely
Crumble
- 3 tbsp coconut flour
- 1/4 cup coconut sugar
- 2 tbsp butter, melted
- 1 tsp cinnamon
- *coconut butter for drizzling on top
Instructions
- Preheat oven to 400 degrees F and fill muffin pan with 12 silicone cups
- Whisk together eggs, coconut sugar, butter, milk and vanilla extract. In a separate bowl, combine flour and baking soda
- Combine wet and dry ingredients. Mix in apples.
- Fill each muffin cup and top with crumble
- Bake for 18-20 min
- Let cool, top with coconut butter & refrigerate until coconut butter hardens
