Monster Protein Cookies

Ingredients
  

  • 1/2 cup + 3 tbsp vanilla pea protein powder
  • 1/3 cup oat flour
  • 1/3 cup drippy peanut butter
  • 1/3 cup maple syrup
  • 1 egg
  • 2 tbsp milk of choice
  • 1 tsp vanilla extract
  • 1/2 tsp baking powder
  • dash of salt
  • 1/4 cup M&Ms

Instructions
 

  • Preheat oven to 350 degrees and line a baking sheet with parchment paper or silicone baking mat
  • Mix together egg, peanut butter, maple syrup, milk and vanilla extract until smooth. Then mix in oat flour, pea protein, baking powder and salt. Finally, fold in M&Ms.
    * the cookies are not very sweet, so if you'd like - add some extra M&Ms, chocolate chips, or granulated sugar of your choice.
  • Roll into 14-16 balls, place on baking sheet and and push down slightly to flatten. Top with a few extra M&Ms.
  • Bake for 8-10 minutes. Let cool & enjoy!
