Blend together hemp seeds, unsweetened apple sauce, vanilla extract and maple syrup until smooth. In a bowl, whisk together eggs, then add hemp seed mixture.
Mix together coconut flour and baking soda. Add dry ingredients to wet and mix until well combined.
Refrigerate for 15-20 minutes. Preheat oven to 350 degrees F
Fill 6-hole silicone donut pan (or grease if using a regular a 6-hole donut pan) about ¾ the way full. Top with sprinkles
Bake for 13-15 minutes
