Cookie Dough Protein Bars

Ingredients
  

  • 1 cup almond flour⁣⁣
  • 1/2 cup cashew butter⁣⁣
  • 1/3 cup pea protein powder⁣⁣
  • 3 tbsp milk of choice ⁣⁣
  • 3-4 tbsp honey⁣⁣
  • 2 tbsp coconut oil melted⁣⁣
  • 2 tsp vanilla extract ⁣⁣
  • 1/3 cup mini chocolate chips ⁣⁣

Instructions
 

  • Line a bread pan with parchment paper⁣⁣
  • In a medium mixing bowl, whisk almond flour and pea protein together. In a separate bowl, mix cashew butter, honey, milk, coconut oil and vanilla extract until smooth. Add the dry ingredients to wet and mix until well combined⁣⁣. If necessary, add 1-2 tbsp more pea protein powder to thicken batter.
  • Fold in chocolate chips. Spread evenly across bread pan⁣⁣.
  • Refrigerate for 2+ hours or until firm. Cut into 8+ bars & enjoy :)⁣⁣

Notes

* I like these best kept in the freezer, but you can also keep them in the fridge
