In a microwave safe bowl, add almond butter, coconut oil, and chocolate chips. Microwave for 30 seconds, then another 15 seconds if necessary. Add salt and vanilla extract, and mix together until smooth.
In a large bowl, add 3 cups chex & ~1/2 cup chocolate mixture. Gently mix until all chex are coated evenly. Repeat this with the remaining chex and chocolate.
Let cool for 5-10 min. Add half of the chex to a large ziploc bag with 1/2 cup powdered sugar. Seal and shake until evenly coated. Then, add the other half of the chex and 1/2 cup powdered sugar. Seal and shake until evenly coated. Toss in toppings, or add to a large serving bowl and add the toppings on top.
