In a large cooking pot, add oil and onion. Sauté over medium heat for 1-2 min, then add green pepper and sauté an additional 2-3 min.
Add in sauce, taco seasoning, and water, and bring to a boil.
Once boiling, mix in pasta, black beans and corn. Cook uncovered for 10 min, or until pasta is al dente. Serve with vegan cheese (optional) & enjoy!
