Vegan One Pot Taco Pasta

Ingredients
  

  • 1 lb pasta of choice
  • 3 cups water
  • 1 can 14.5 oz tomato sauce
  • 1 can black beans rinsed
  • 1 cup frozen corn
  • ½ yellow onion diced
  • 1 tbsp oil
  • 1 green pepper diced
  • 2-3 tbsp taco seasoning
  • 1/2 cup dairy-free shredded cheddar cheese optional

Instructions
 

  • In a large cooking pot, add oil and onion. Sauté over medium heat for 1-2 min, then add green pepper and sauté an additional 2-3 min.
  • Add in sauce, taco seasoning, and water, and bring to a boil.
  • Once boiling, mix in pasta, black beans and corn. Cook uncovered for 10 min, or until pasta is al dente. Serve with vegan cheese (optional) & enjoy!
