No-Bake Red Velvet Truffles

Ingredients
  

  • 1 cup almond flour
  • 1/4 cup coconut cream
  • 1/4 cup coconut oil
  • 3-4 tbsp maple syrup
  • 1 1/2 tbsp beet root powder
  • 2 tbsp cacao powder
  • 1 tsp vanilla extract
  • dash of salt

Chocolate Coating

  • 1 cup white chocolate chips or chocolate of choice
  • 1 1/2 tbsp coconut oil

Instructions
 

  • Combine dry ingredients (flour, beet root, cacao, salt) & in a separate bowl, wet ingredients (coconut cream, coconut oil, maple syrup, vanilla extract). Then add the dry ingredients into the wet and mix until smooth⁣
  • Refrigerate for 30 minutes, then roll into 12-16 balls
  • Melt chocolate with coconut oil (on stovetop over low heat, stirring frequently OR in microwave)
  • Using a fork, dip each ball into the chocolate and then place on a baking sheet or plate lined with parchment paper. Add sprinkles on top (optional)
  • Freeze for 15-20 minutes, or until chocolate hardens. Enjoy :)

Notes

I keep mine in an airtight container in the freezer
